If the system admin that was used to create the connector has the "View Encrypted Data" permission, data in the backup will not be encrypted. After a restore it will be encrypted by Salesforce again, using the currently deployed encryption key.

If the system admin doesn't have the "View Encrypted Data" permission, data in the snapshot will be masked and we will not be able to restore it.
